Fresh Mussels with Thai Green Curry Sauce

Whole Foods- Fresh Mussels with Green CurryI have always wanted to like steamed mussels and was jealous of people who ate them and dipped yummy fresh bread into the sauce. My jealousy has faded, I have fallen in love with fresh mussels. When they are made right, with a delicious sauce, for dipping yummy French fries or French baguette, it really can't get any better. This recipe is easy, quick and great for entertaining guests. The sauce can be made ahead of time, so all you would need to do is steam the mussels in the sauce and cut up the French baguette.

Mussels are filled with iron; which our bodies need to produce healthy red blood cells. Without healthy red blood cells, your body would not get enough oxygen and you would lack energy.

The garlic and ginger contain immune boosting nutrients to maintain a healthy immune system and help combat colds. The fat in the coconut milk provides energy and helps protect our cells.

The LOVE in this recipe is simple, French baguette with organic butter lathered all over it! Dip it, LOVE it!

It's been a hard month, trying to be motivated to create recipes and write something for all of you has been the last thing I wanted to do, sorry about that:) It's just been one of those months where I have had no desire to create and share.

The weather has changed a little in the last couple of days; it's getting cooler and the smell of fall is in the air at times. I finally wanted to create a recipe, soup, of course. Who doesn't crave a delicious, creamy whole foods soup when the climate starts to get a little cooler and cozier.

This soup does not contain dairy, is gluten free and contains a great amount of vitamin A; for healthy eyes, maintaining healthy skin and it is necessary for producing red blood cells. 

My favorite thing about this recipe is that it takes 20 minutes to cook. Seriously, because I am using frozen squash that has already been seeded and peeled, really, the only thing that you need to cut is the onion, garlic and ginger. It's quick, easy and deliciously whole!

Organic Buttermilk and White Truffle Dressing

Whole Foods- Organic Buttermilk and Truffle DressingWhat can I say about this diverse dressing that will make you want to prepare it yourself? It's soooooo easy, really, everything goes in a blender and then a master piece of deliciousness arises:)

Organic buttermilk is the liquid that is left behind after churning butter out of cream. Do not be scared away by the name Buttermilk, it is highly nutritious and actually has less fat than organic whole milk; because the fat has been removed in order to make delicious, organic butter. Fat is good for you, good fat that is, and the fat from organic buttermilk is in love with your cells:)

Beet and Walnut Salad

Whole Foods- Beet and Walnut SaladThis is such a delicious, classic salad and here is my version of it. The LOVE comes from a little orange zest and garnishing the salad with summer edible flowers. I love the sweetness of the balsamic cream and those crunchy bits of Maldon sea salt and the creaminess of the French goat cheese, yuuuuum!

Our liver loves beets, they give the liver specific nutrients that help the liver detoxify unwanted chemicals and other toxins. Walnuts are filled with omega 3 oil; which we need for proper brain development, healthy skin and hair and healthy bowels.

I sometimes use the tops of the beets for this recipe. Beet greens are filled with many nutrients and it's always nice to use the whole vegetable in a recipe. I sauté the beet greens  in some organic, extra virgin coconut oil, sea salt and pepper. I then added the beet salad on top of the beet greens.

Gluten Free Lentil Burgers

Whole Foods- Gluten Free Lentil BurgersYou know what I love most about these lentil burgers? They are easy, ya know why? Because they are made in a food processor and they are baked on a baking sheet, instead of individualy pan fried. That, makes me happy.

These lentil burgers are filled with nutrient dense vegetables, protein from the egg and lentils, heart healthy minerals, dairy free, gluten free and most importantly, they are actually delicious.

Raw Cashew Dip

I had a dream, again, and this is what I dreamt about. Raw cashew dip, but with a falafel flavor to it.

I think this vegan, gluten free, dairy free dip is so versatile; it can be used as a spread on sandwiches, it can be turned into a creamy pasta sauce for plant based eaters, it can be a great snack with whole wheat crackers and fresh veggies or it can be used as a tasty condiment for my gluten free lentil burgers.

Cashews are high in copper which is a critical component for the formation of our blood cells and the health of our immune system. Cashew are also high in magnesium; which help relax the muscles and is necessary for the proper absorption of calcium.

They do contain a reasonable amount of oxalates which in turn, should be eaten sparingly for people that suffer from kidney stones. I recommend purchasing your raw cashews from the fridge at your local health food store, instead of byuing them from the shelf. Nuts are high in good fat, therefore can go rancid quicker on the shelves than if kept in the fridge.

Gluten Free Apple and Cinnamon Muffins

Whole Food- Gluten Free Apple and Cinnamon MuffinsI could start this little post off by saying, that I had no problem creating these little delicious jewels, but I would be lying. It has been a pain in the booty, it took me 3 frustrating times to make these, but I am now satisfied with the results and I hope you will be too.

I was trying to create a gluten free muffin recipe that was moist and that had a great texture. So many gluten free muffin recipes are dry, crumbly and tasteless. I also wanted to use up my homemade almond flour that was leftover from making my homemade almond milk. 

So here they are; Gluten free apple and cinnamon muffins that are high in fiber, calcium, protein and good fat.

Curry Cauliflower with spinach

Whole Foods- Curry Cauliflower with SpinachHere is my version of curried coconut cauliflower. It's vegan, gluten free and dairy free, and probably free of other ingredients as well, but I wanted to highlight those specific ones. It seems as though, cauliflower and Indian red curry powder love each other just like honey and vanilla do!

I could have created a very time consuming and difficult version of this but like I always say, it doesn't have to be complicated to be delicious. As long as you purchase a good quality Indian red curry powder and use full fat coconut milk, you will be so happy that you made this.

Cauliflower is a powerful anti-cancer, cruciferous vegetable. The chickpeas are high in fiber and contain great vegetable protein to help build tissue and muscle. The wilted spinach actually contains more iron in it than if it were not cooked, did you know that?

The LOVE is the lime leaves, I do say they are optional but if you can find them, use them. You can always freeze the leftover lime leaves for the next time you make this dish or my Thai red curry coconut vegetables.

Gluten Free Rice Noodle and Raw Vegetable Bowl

Whole Foods- Gluten Free Rice Noodle and Vegetable BowlOh my goodness, this meal is fresh, great for summer and so easy, I promise. It is so versatile, the sauce is the best part because you can do so much with it.

This rice noodle and fresh vegetable bowl is so nutrient dense. It is filled with raw enzymes, antioxidants, vitamin C, fiber, iron, calcium. I could go on, but I think you get the point. Let your guests or kids make their own bowl, just prep all of the vegetables, noodles and sauce, add them to pretty bowls and let everyone make their own whole foods creations.

Organic Yogurt Cheese

I am so excited to share this recipe with all of you. This is such an easy recipe to start off with once you decide to start eating, and cooking with more whole foods. The satisfaction of making your own yogurt cheese will get you excited to learn more!

When you make your own yogurt cheese, you can flavor it with whatever natural flavors that would like. I love garlic and chives, sometimes raw honey and sometimes I like to spice it up with cayenne pepper and fresh basil.

The possibilities are endless. It's tangy, creamy, whole and delicious! Yogurt cheese is filled with good fat, which our bodies need for proper hormone development and for healthy cells. It also contains protein to help build muscle and tissue, and probiotics, which we need for a healthy gut.

How To Make Homemade Almond Milk

This is one of my new favorite things to do. There is nothing better than making homemade versions of the processed products that you would normally buy at the grocery store. It's cleaner, no fillers, no artificial flavors, no food colorings, and it tastes so much better.

Almonds are a great source of vitamin E, magnesium and calcium. I use my homemade almond milk as a substitute for cows milk in all of my recipes. By making your own organic almond milk you get the benefit of the delicious milk, but you also get to use the leftover almond meal for baking or added to your smoothies in the morning. Almond flour is quite expensive to buy so you are actually saving yourself some money as well by making it yourself. SO efficient!
