Whole Foods- Raw Cashew Dip
I had a dream, again, and this is what I dreamt about. Raw cashew dip, but with a falafel flavor to it.
I think this vegan, gluten free, dairy free dip is so versatile; it can be used as a spread on sandwiches, it can be turned into a creamy pasta sauce for plant based eaters, it can be a great snack with whole wheat crackers and fresh veggies or it can be used as a tasty condiment for my gluten free lentil burgers.
Cashews are high in copper which is a critical component for the formation of our blood cells and the health of our immune system. Cashew are also high in magnesium; which help relax the muscles and is necessary for the proper absorption of calcium.
They do contain a reasonable amount of oxalates which in turn, should be eaten sparingly for people that suffer from kidney stones. I recommend purchasing your raw cashews from the fridge at your local health food store, instead of byuing them from the shelf. Nuts are high in good fat, therefore can go rancid quicker on the shelves than if kept in the fridge.
