There really isn't a recipe for these delicious morsels and that is what I love about it. What is important in this recipe is quality ingredients!
Sea salt (preferably Maldon sea salt flakes)
New baby potatoes and leave the skin on please
Freshly ground pepper
Organic butter, yes, butter
Note- Obviously not low carb but such a great summer treat!
Gently boil your potatoes, if you hard boil them they will have a glue like texture. It should take about 15-18 minutes. Prick the potatoes with a fork and if the fork comes out easily, they are ready.
Add the rest of your ingredients and enjoy the sweet, creamy deliciousness!
Pick cute, little new baby potatoes and all the same size so they cook at the same time. The Maldon sea salt holds it's texture in the potatoes, so you get a wonderful salty and crunchy surprise with each bite of potato.
