2 lbs medium sized shrimp
8 Limes or 1 1/2cups lime juice
1/3 Cup Red onion
1/2 Cup Red pepper
1 Serrano pepper or 2 Tablespoons
3/4 Cup Cucumber
2 Tomato Roma
1/2 Cup Cilantro
Note- Omit the tostadas and you've got yourself a low carb delicious snack.
Remove tails and shell from the shrimp and cut them down the middle in half or cut into little pieces, set aside in a bowl. Cut your red pepper, red onion, cucumber, tomato and serrano pepper into fine dice pieces. Add them to the shrimp bowl.
Chop your cilantro and juice your limes. Add them to the shrimp bowl with a little sea salt and toss everything together. Allow to sit in the refrigerator. After 1 hour stir it up then allow it so sit for another 2 hours. Once you see the shrimp are pink, it is ready to serve!
Serve with corn tostadas and a fresh slice of avocado.
