This recipe is based on a Paleo diet, it is great for people who are sensitive to grains and who have celiac disease. It's light and so simple. Cauliflower is a cruciferous vegetable and it is filled with vitamin C and magnesium, two powerful nutrients which aid in cancer prevention. It is also high in fibre and aids in the detoxification system of our body. It contains a large amount of vitamin K which helps blood to coagulate properly and studies have shown vitamin K to help reduce inflammation in the body and prevent hardening of the cardiovascular system due to calcification.
1 head cauliflower
1/2 cup onions (chopped small)
2-3 cloves garlic (depending how much garlic you like)
1-2 tablespoon coconut oil
1/4 cup cilantro (chopped fine)
In a food processor pulse the garlic and onion until fine. Place them into a bowl and set aside. Add half of the cauliflower to the food processor and pulse until it has a grainy rice-like consistency, do not add too much at one time. In a large sautee pan heat up coconut oil and add the onion and garlic, sautee until onion is translucent. Add the cauliflower rice and sautee for 5-7 minutes. Season with sea salt, black pepper and cilantro.
