If you ask me, summer is for Mojitos! Aaron and I planted mint a couple of weeks ago on our balcony and it is growing like weeds so we had to put it to good use.
The original recipe calls for refined sugar but we love to add local honey.
In a 6 oz glass add the following:
1 1/2 oz white rum
1/2 oz Malibu coconut rum
1 TBSP local raw honey
5-6 mint leaves
1/2 lime for the juice
Lots of ice
Add the rum, Malibu rum, lime juice, mint and honey to the glass. Stir them together until the honey melts from the lime juice and the essential oils from the mint have come to life. Add ice to the top of the glass and stir it around, allowing the ice to melt. Top the glass with more ice and a little water.
Be prepared to smile:)
Remember to use alternative sweeteners, like honey or even maple syrup.
