This grilled red pepper relish is so versatile. Red peppers are filled with vitamin C which is supportive to the immune system and they are also packed with antioxidants to help fight disease, so eat up!
2 Red peppers
1 TBSP Extra virgin olive oil
2 TBSP Fresh Parsley
1-2 cloves garlic (depending on how big they are)
Salt and pepper
Turn your grill onto medium and place the whole pepper (no oil necessary) on the grill and cook, turning regular until soft and a fairly black.
Place your peppers into a paper bag ( Do not place in a bowl and cover with suran wrap, the heat from the peppers heat the suran and then chemicals leach from the plastic wrap.) Allow to sit for 10-15 minutes. Remove peppers from the bag, peel off the chard parts of the skin and remove the seeds. Cut into thin slices and place in a bowl. Chop the parsley and garlic and add them to the red pepper bowl along with the olive oil and salt/pepper. Toss together and allow to marinate for 1 hour. It makes about 1 1/2 cups of deliciousness!
