Lentils come from the legume family. They are such a great way of adding more fibre and vegetarian protein into your every day diet. One cup of cooked French lentils provides your body with about 18 grams of good quality protein. French lentils are also packed with a great amount of folate and iron.
Simmer in 2 cups of water to 1 cup of dried lentils for about 15 minutes.
1 cup cooked French lentils (known as Puy lentils)
1/4 cup Italian parsley (chopped fine)
1/2 cup kale (finely chopped)
1/3 cup green onions (chopped fine)
1/4 cup sheep feta (crumbled)
1/2 teaspoon garlic (minced)
1 tablespoon extra virgin olive oil
1 tablespoon white wine vinegar
Freshly ground pepper to taste
Note- This would not be considered a strict low carb salad due to the lentils.
Chop all of your ingredients according to the size I specified above. Add everything into a large bowl, except for the olive oil and white wine vinegar.
Toss all ingredients together with a large spoon and season with the olive oil, white wine vinegar and freshly ground pepper.

Try adding different kinds of herbs and see which ones you like best.
Add some cooked quinoa to this salad and stuff tomatoes with it, top the tomatoes with cheese and bake them,yum.
