Whole Foods- Vegan Banana PancakesHonestly, I didn't have high expectations for these little suckers, but, I was wrong. I think they are delish!
I got the idea of adding chia seeds to the pancakes from a beautiful friend of mine. It is such a great idea, it adds omega 3 fatty acids and magnesium to them, way to pump up the nutrient density eh?
They reheat beautifully and these vegan pancakes do not just have to be a treat in Sunday morning. Now, I must tell you that the texture of these are different, obviously from regular pancakes. They are super moist from the banana and they are chewy and fluffy. You may think that after you have cooked them, that they are still raw; it's the banana folks, they will always seem a little "raw" like, but trust me they are totally worth trying.
Look at it this way, your giving the environment a break, some chicken a break and some cow a break by taking your part in eating less animal products, even if it's only for breakfast.
Oh ya, and they taste like banana, so if you don't like banana, I wouldn't recommend these. I would try supplementing puree mango??? Maybe it would work, think outside the box!
