Whole Foods- Leek and Chickpea Soup
O.K, I have to say right away that my lovely husband did not take this photograph, I did and it definitely doesn't compare to Aaron's amazing pictures. He would have captured the beauty of this leek and chickpea soup much better than me, but he's still in Mexico enjoying a couple more weeks. The show must go on with out my man and I have been wanting to share this recipe for a while. Every time I get back from travelling I crave a yummy, warm homemade soup. This is the perfect creamy soup to share with all of you today if your living in Canada right now. OMG, it's chili and snowing like crazy.
This is my go to soup for any clients that have adrenal fatigue, digestive problems or that are going through chemotherapy. This leek and chickpea soup is so grounding and comforting and those that suffer from adrenal fatigue especially, crave comfort. It is also easy to digest, so instead of the bodies energy being wasted on breaking food down and digesting, the energy can be spent on healing the body and help bring it back to homeostasis. It also contains sulphur; which supports the liver, helps balance the body in stressful times and can help fight cancer.
The LOVE comes from the creaminess that you achieve in this soup, not from 35% cream (although delicious) but from the potatoes and chickpeas. Pure deliciousness!
