Whole Food- Vegan Broccoli SaladWhy does every single broccoli salad have bacon in it? Well, because bacon makes everything taste delicious, that's why!. I was on a quest to create a delicious broccoli salad without bacon today, mostly because I didn't have any yummy organic bacon and I wanted to create a salad without meat today.
Broccoli is a cruciferous vegetable and contains powerful nutrients that help fight many cancers and other diseases. It is high in calcium, for strong bones, high in fiber, and helps in the detoxification process for the body. When you steam the broccoli ever so slightly, you increase the cholesterol lowering benefits in the broccoli as well.
The walnuts in this salad are high in omega 3 fatty acids, which are needed for healthy skin, hair and brain. The tahini in the dressing is high in calcium and the apple cider vinegar is great for our digestive tract.
So I say, eat up. It's easy to make or else I wouldn't have made it today after stampeding my little booty off all day and night yesterday:)
